Ingredients for six people

- 375 grams of chestnut flour

- 500 grams of water

- 80 grams of pine nuts

- 80 grams of raisins

- 80 grams of walnuts

- 2 sprigs of rosemary

- 2 tbsp of olive oil

- 1 tsp of salt

Preparation

In a bowl pour the chestnut flour and the water and mix energetically.
Add the pine nuts, chopped walnuts, and raisins. Make sure to set aside a part of dried fruits for the final decoration. Add salt and mix well.
Transfer the batter into an oiled round baking tray.
Sprinkle on the cake surface the remaining pine nuts, walnuts, and raisins.
Moreover, add rosemary needles and a drizzle of olive oil.
Cook for 35 minutes in a static oven at 180 °C.
Enjoy the castagnaccio lukewarm.

Castagnaccio can be kept in the fridge for four days.
