Vegan raclette
Raclette is a delicious French dish, great for tackling winter! Here is a vegan version for making raclette at home.

Ingredients for two people
- 200 grams of vegan raclette cheese (you can also make it at home with this recipe)
- 500 grams of potatoes (about 4)
- 500 grams of leek (about 1)
- 10 pickles
- 1 tbsp of olive oil
- 1 tsp of black pepper
Preparation
First, peel the potatoes and boil them. Meanwhile, slice the leek and cook it in a pan with oil.
When the vegetables are ready, prepare the raclette machine and cook the cheese for a few minutes.
Serve the vegetables hot with the melted cheese, pepper and pickles.
The vegan raclette can be stored in the fridge for two days.
