Ingredients for two people
- 240 grams of cooked chickpeas
- 400 milliliters of coconut milk
- 160 grams of rice
- 6 small tomatoes
- 90 grams of onion (about 1)
- 1 tbsp of olive oil
- 1 tsp of salt
- 1 tsp of curry
- 1 tsp of turmeric
- 1 tsp of ras el hanout
Preparation
To prepare this tasteful curry first of all you have to cook the rice. While waiting, cut the onion and let it cook in a pot with olive oil, curry, turmeric, and ras el hanout.
When the onion is browned, add chickpeas, salt, and coconut milk. Mix and let it cook for 20 minutes. When the curry has thickened, add the small tomatoes and serve it with rice.
Curry can be kept in the fridge for two days.
