Vegan almond ricotta

Ingredients for four almond ricottas
- 200 grams of almonds
- 900 grams of water
- 40 grams of lemon juice
- 1 tsp of salt or sugar (it depends if you want to use your ricottas in sweet or salty recipes)
Preparation
Let the almonds soak for about 8 hours. Peel them and mix them with the water. Warm up the mix in a small saucepan. When it is almost boiling, pour the lemon juice and mix. Remove the saucepan from the stove and let it rest for a few minutes. Pour the mix into gauze nets and let it drain off for at least 8 hours.
Almond ricotta can be kept in the fridge for six days.
