Ingredients for two people
- 100 grams of couscous
- 190 grams of carrots (about 2)
- 240 grams of spicy chickpeas
- 10 small tomatoes
- 60 grams of onion (about ½)
- 2 tbsp of olive oil
- 1 tsp of salt
- 1 tbsp of tahini sauce
Preparation
Cut the onion and the carrots and fry them in a frying pan with olive oil. Add the tahini sauce when the carrots are almost cooked. Add in the frying pan cut tomatoes and spicy chickpeas, you can prepare them using this simple recipe. Cook for two more minutes, then turn off the flame and add couscous, water (to cover it all), and salt. Cover up with a cover and let it sit for 10-15 minutes until the couscous has blown.
Spicy chickpeas and vegetable couscous can be kept in the fridge for three days.
